Right from their first meeting, it was obvious that their collaboration was going to be fruitful, with plenty of challenges and lots of creativity and cooperation.
For Guy Bourbonnière, the attraction of Sébastien Houle’s original and refined cuisine was immediate and irrevocable. Charmed by the artisanal aspect of Sébastien’s cuisine, Guy was also strongly attracted by the idea of developing a Québec regional cuisine.
In 2006, he became Sébastien’s associate and a partner in the ongoing adventure of Restaurant sEb. It is Guy who creates the wine list, with which he has taken great pains and allowed a definite place of honour for Québec and Canadian wines.
“ I believe that our Québec identity can be defined by our cuisine and the various products being developed by many devoted local producers. To promote the wealth of fine products we have by preparing them with flair, as Sébastien is doing, and enhancing them with local wines, is our way of helping to put Québec culture in the limelight. ”
An experienced player in the field of wine service, Guy Bourbonnière spent more than a decade learning his trade in the great hotels of Montréal, including the Four Seasons and The Queen Elizabeth, and was later food and beverage manager at the Miramont-sur-le- Lac resort.
He now looks after the dining room at Restaurant sEb, which caters for a local and international clientele, and perfectly orchestrates the service.
Guy Bourbonnière is an experienced wine steward who also offers his services as a wine consultant and specialist. Passionate about all products of the vine, he plays a central role in the restaurant by recommending food and wine combinations to customers that are sometimes harmonious, occasionally audacious, yet always adapted to their taste.
Guy Bourbonnière offers a series of courses for the general public. The sessions fall into four categories: introduction, regions, variety, tasting.
It is also possible to take a training session on table service, with emphasis on serving wine and general table service in a restaurant.
