SÉBASTIEN HOULE, Chef
Tall, handsome and in his early thirties, looking more at ease on the deck of a big yacht or fast motorbike than in a kitchen, Sebastien Houle has already explored several continents in search of his own signature as a chef.

GUY BOURBONNIÈRE, Sommelier
An experienced actor in the field of wine service, Guy Bourbonnière spent more than a decade learning his trade in the great hotels of Montréal, including the Four-Seasons and The Queen Elizabeth, and was later food and beverage manager at the Miramont-sur-le- Lac resort.

ISMAEL OSORIO, Chef de cuisine
It’s easy to imagine a middle-aged man who enjoys traditional-style cooking, but one couldn’t be more wrong. Ismael Osorio is young, lively, curious and funny and for him, cooking is like a show. It’s always surprising and above all, fun.

CORY CIONA, Sommelier
After many trips abroad, Cory Ciona returns to Québec to promote and share his passion for our contry's wines. He discovers the majestic wineries of Québec and Western Canada. With 15 years of experience in the hotel business, his priority remains customer satisfaction.
